Mini Roasters on the Half Shell
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons green onion, finely chopped
- 4 teaspoons prepared horseradish
- 2 teaspoons lemon juice
- 10 Rocky Mountain Gourmet Fingerling Potatoes
Preheat oven to 375 degrees. Roast potatoes 35 to 40 minutes or until tender. Remove from oven; cool slightly. Preheat broiler.
Cut 8 potatoes lengthwise in half. Using a teaspoon, scoop out center of potatoes to make shells, leaving a 1/4-inch rim. Place potato centers in medium bowl. Peel remaining potatoes; add to bowl. Mash potatoes with potato masher. Add remaining ingredients; mix well.
Arrange potato shells on shallow baking pan. Top each with 1 tablespoon potato mixture. Broil, 3 to 4 inches from heat, for 5 minutes or until tops are lightly browned. Makes 4 servings.
