Petite Gourmet Saltimbocca
Preheat oven to 375 degrees. Pour oil into 15 x 10-inch baking pan, tilting pan to coat bottom with oil. Heat in oven 5 minutes. Arrange potatoes, cut side down, on hot pan. Bake 30 to 35 minutes, or until tender. Preheat broiler. Turn potatoes, cut side up. Top each with half a slice of prosciutto; sprinkle with 1 teaspoon sage and 1 tablespoon cheese.
